Is it okay to substitute parsley flakes found in a jar for fresh, flat-leaf parsley?

I am a poor college student who is just beginning to get into cooking. I am making my dear cousin who had knee surgery lunch and am making something from a Rachel Ray cookbook. She calls for everything fresh (which, of course makes everything taste better), but i already have to go out and buy a lot of the ingredients. I have some parsley flakes that are in my mother’s spice cabinet and i was just wondering if i could use that instead of going to buy fresh parsley.

Dried parsley is one item that I rarely use. Somehow in drying, a lot of the taste is lost. You can use it if it is the only thing you have in your cabinet. As for fresh parsley, flat-leafed parsley has a much more intense and appealing flavor rather than the curly parsley you see. If your receipe calls for adding it to ingredients, it might be OK, but if you are supposed to sprinkle it on top of a dish, I would omit it. I smiled when you mentioned that you were cooking for a friend who had knee surgery. What a kind and caring gesture. I have no doubt that your kindness on top of a homemade dish made with dried parsley flakes will be a dish your friend talks about with glowing terms for years. Yes, I did have knee replacement surgery 5 years ago and still smile when I think of the kindness friends and family showed me with their gifts of home made food.
