Can you find this recipe from Rachael Ray chicken?
A friend of mine has been raving about a meal that includes spinach stuffed chicken breast some kind of cheese, covered in a white wine sauce. I do not know much else about it and can not find in any of their sites. Does anyone know what is or a link where I can find it? Thanks!
Mushrooms stuffed with spinach and chicken 4 boneless chicken breasts, skinless, 6 oz large plastic storage bags food or wax paper package 1, 10 ounces frozen spinach, chopped 2 12 tablespoons butter, the small mushrooms, crimini or button 2 cloves garlic, 1 shallot small cracked, quartered Salt and freshly ground pepper 1 cup skim part black ricotta cheese 1 / 2 cup Parmesan or Romano cheese, a couple of handfuls 1 / 2 teaspoon fresh grated or ground nutmeg 2 tablespoons sticks extra virgin olive oil Sauce: 2 tablespoons butter 2 tablespoons flour 1 / 2 cup white wine 1 cup chicken broth Place the chicken in the center of a food storage bag or plastic two large sheets of wax paper. Pound the chicken from the center of the bag to the outside through a heavy bottomed skillet or mallet. Be firm but controlled with your strokes. Defrost spinach in microwave. Transfer spinach to a kitchen towel. Twist towel around and drain the spinach until very dry. Transfer mixture to medium bowl. Place a nonstick skillet over medium heat. When the pan is hot, add butter, mushrooms, garlic and shallot. Season with salt and pepper and cook 5 minutes. Transfer mushrooms, garlic and shallot in a food processor. Pulse to grind the mushrooms and transfer to the mixing bowl, add canned mushrooms to spinach. Add ricotta and grated cheese to the bowl and the nutmeg. Stir to mix the filling. Return skillet to oven over medium-high. Place a pile of stuffing on each breast and wrap and roll breast over the filling. Secure with toothpicks breasts teeth. Add 3 tablespoons oil to pan, 3 turns of the pan. Add the chicken breasts from the pan and sear on all sides, cook chicken 10 to 12 minutes. Meat cook quickly because it is thin. Remove breasts, add the butter and flour the pan. Cook butter and flour for a minute, whisk in the wine and reduce one minute more. Whisk in broth and return breasts to pan. Reduce heat and simmer until ready to serve. Remove toothpicks. Serve breasts whole or, remove tray, cut at an angle and fan out on plates. Top chicken breasts or sliced chicken breasts with generous spoonfuls of the sauce.
