Why not freeze my company, never dries, and runs cakes!?

OK …. I'm about to cry, my merengue is always a disaster …… The recipie that used last night was great 2 (60 grams), egg whites 1 1 / 2 cups (300 grams) white granulated sugar 1 / 4 cup (60 ml) of water cold 1 tablespoon light corn syrup 1 teaspoon vanilla extract in a stainless steel bowl over a pan of simmering water, put the egg whites, sugar, water and corn syrup. With a hand mixer beat the mixture for 3 to 4 minutes on low speed. Increasing the speed to high and continue to beat for 3 to 4 minutes or until the ice is bright and glossy with soft peaks …… but .. was not strong enough to stay in DENR cake !!!…. Please advise !!!!!

The problem here is more water syrup and sugar, ie more than syrup. The egg whites will stand only so long before going poof, and there is training ice. Here's the solution: Forget the egg whites, cold water is syrupy. Now make a white sauce base: 2 or 3 tablespoons of flour and a cup of milk or half and half. Stir while heating to keep it soft and unlumpy, boil for a minute or two. You want a thick white sauce, a sort of sausage and sauce. That this cool to room temperature. On the other hand, cream 2 sticks butter, pour in two cups of sugar, some vanilla and other flavorings as you like. Now, mix the white sauce that playing at high speed until smooth. This material is spread like a dream, not so little flour will never know it's there. However, as dry powder, flour has exactly the effect you would expect – it becomes rigid and keeps the icing on the cake. Perfect! Back to the egg whites. The only way to keep your fluffy character in anything is to cook while they are still soft, just how to make a meringue or a Omlet for the case. And so, if you use sugar syrup instead of your recipe, and less or no water, you can get it to work by having to put the frosted cake under high-heat time enough to sear and cook the icing on the fluff egg whites. And the icing should not run that way, either. Problem solved!
