Has Anyone ever put oak wood around the sides of the counter tops instead of bullnosing the granite??

yes , but its not a great idea,
the main reasons , for the bull nose , is its much cleaner
it looks better, and wont contain dirt,
getting wood to stay i n place ,on granite is hard,
